Vin Jaune is a local specialty of the Jura region. It is made exclusively from Savagnin grape and develops flavors of curry and walnuts after six years of aging sous voile. The richest Vins Jaunes come from the hilltop village of Château-Chalon where Berthet-Bondet is located. By EU law, all Vin Jaune must be bottled in a squat 620 ml bottle called a clavelin. 

After being allowed to breathe for several hours, it is able to stand up to the best cuisine, and happily accompanies white meats with rich creamy sauces, spicy foods or a fine cheese, notably Comté. 

The 2004 Domaine Berthet-Bondet Château-Chalon is a clear, bright, yellow-gold colored wine of high concentration. On the nose, the wine shows fruit aromas of cooked apple, dehydrated apricot and lemon oil. Non-fruit aromas of green almond skin, spearmint and white flowers. Minerality is high with wet limestone and chalk.
