The 2005 Jean et Sebastien Dauvissat Séchet Chablis Premier Cru is packed with crushed marine bone, dampened chalk, and chamomile. There's just the right amount of development on the nose and palate as the wine is beginning to show secondary notes of toasted almonds, freshly baked brioche, and lemon custard. Dry, electrifying and long; this tastes as great Chablis should.  

The Duavissats farm 1.25 hectares of Premier Cru Séchet, which sits within the larger premier cru of Vaillons. For the purpose of simplification, growers have a choice of whether to bottle their wines under the smaller "lieu-dit" names (Butteaux and Forêts within Montmains are two famous examples). 

Pair this wine with poached halibut with button mushrooms and wilted greens, a fricassée of poultry or shellfish or simply accompanied by warm baguette and high-quality butter.
