Philippe Ballot ceded winemaking responsibilities to his son Charles in 2000. The biggest change is that the wines are made with even greater attention to detail and are consequently fresher and show more nervosité than before. 

Produced from three parcels: Les Corbins near Volnay, Chaumes de Narveaux on the hillside, and Pelles Dessus next to Puligny. The fermentations were indigenous, bâtonnage occurred until malos finished, and the wine was aged in one- and two-year-old casks for 12 months. 

The nose shows remarkable focus with an immediate snap of crushed rock and tart citrus. Layers of freshly sliced apples, grilled lemons, and raw butter broaden the wine's aromatic profile. Chicken and fish will need more than a lemon wedge when pairing them with this wine. Fish or shellfish with cream based sauces are recommended as are roasted game birds or broiled pork served with your best jar of mustard.
