Jean-Paul Labaille married the daughter of Kimmeridgian and has continued the work of the Domaine, bottling under the label, Thomas-Labaille since the early 2000’s. While some changes were made, namely the removal of truly old barrels, the vinification and traditional style have remained much the same—a distinctively round, textural Sancerre that is notable for the region.

30 minutes walk from the town of Sancerre lies the village of Chavignol, home to the “Les Monts Damnés”, a particularly steep and sun-soaked vineyard, considered the best of the AOC. The Domaine’s meticulously hand-tended old vines provide the ripe, concentrated fruit with a certain “fatness” that balances with the flowery herbal top-notes and nerve bending acidity. The underlying mineral signature, so common in Loire whites, shows special flourish, as the soils of Les Monts Damnés are common to Kimmeridgian found in Chablis.

Intense and mineral driven, but with weight and ripeness, this is a Sauvignon Blanc that pairs beautifully with Spring and early Summer dishes: Cream of Asparagus Soup, Boccete in Brodo, Peas Shoots and baby greens (featuring Crottin de Chavignol, of course) and poached salmon with dill.
