We've invested a great deal of time learning Sancerre's nuances, including the various soils and contours of its hill which dictate whether certain plots will be planted to Sauvignon or Pinot, or left for the goats to graze. 

Nearly every plot of Sancerre's 6,000 acres has its own lieu-dit (place name). Vineyards are planted at various exposure to the sun and on three main types of soil: terres balnches, flint, and a kind of pebbly limestone called caillottes. Remarkably, every Sauvignon or Pinot wine produced from these various vineyards expresses something different. 

The 2010 Domaine Girault Sancerre "Le Grande Moulin" is a wine of bonne typicité and varietal exactitude. The wine is bone-dry and tensile, packed with lime and minerality. Patrick Girault's 2010 Le Grand Moulin is from a parcel near the famous Chêne Marchand where the soils are dominated by caillotte pebbles.
