Weingut Niklas is a small wine estate owned by the Sölva family in the tiny Alto Adige village of St. Nikolaus. The young Dieter Sölva makes the wines with his father Josef, who is a well-known viticulturalist who does consulting for several wineries in the area. Dieter and his father make a range of excellent wines, but it is their cherry-fruited, floral Schiava that we find utterly irresistible. 

Given its unfashionable pale color and humble reputation, it will probably come as a surprise to learn that this ancient and widely-planted grape variety is wildly popular among Süditroleans. But the locals know that this light and refreshing beverage is one of the most incredibly useful wines on the planet. 

There is no better wine to accompany speck as a juicy and cleansing counterbalance between bites of smoky ham. It works amazingly well with hearty mountain dishes like the filling bread dumplings known as canederli (knödel in German) or creamy polenta topped with an egg. It can also be chilled down and served with a picnic of cold fried chicken and potato salad. Schiava also works with a crudo of ahi tuna topped with good oil and a sprinkling of chili flake, and we’ve found it essential with Chinese takeout.
