Pierre and Sophie Larmandier produce what is probably our ideal style of Champagne. Pierre's uses minimal intervention in the cellar, which results in very special wines, although Pierre would likely give all the credit to his 15 hectares of grand and premier cru vineyards in the Côte des Blancs. Pierre makes his blends in the spring, when he decides whether or not to produce his two single-vineyard wines: Vieilles Vignes de Cramant and Terre de Vertus.
What truly sets these apart (and consequently made us fall in love with their style) is Pierre's belief that terroir is best expressed with minimal levels of dosage. Dosage is the amount of sugar added after the second fermentation that dictates the sweetness level of Champagne. In the case of Pierre's iconoclastic Terre de Vertus, there is no dosage at all, and only delicate, flaky pastry flavors and the signature minerality of terroir remain. These are world-class Champagnes that illuminate their terroirs with crystal-clear precision.

The Larmandier-Bernier Terre de Vertus Blanc de Blancs Non-Dose Premier Cru Champagne shows a pale straw color with glints of green and a very fine mousse. On the nose, the wine shows sweet, yellow apple fruit, meyer lemon, melon and green banana. Non-fruit aromas of honey drizzled fruit, and apricot pastry. The wine is intensely mineral like cut chalk and wet river stone. On the palate, the wine shows a forceful attack of firm acididty and cutting effervescence. Extraordinarily long and fine on the palate, this is quite simply our ideal bottle of Champagne. 'Nuf said.
